Strawberry Summer Salad

Serves 2


  • 1 Bunch of Arugula
  • Block of Parmesan
  • Small Box of Strawberries (8 oz)
  • Balsamic Vinegar
  • Extra Virgin Olive Oil
  • Whole-Grain Mustard
  • Sea Salt
  • Black Pepper
  • Smoky Balsamic Crunchsters


Begin by making the vinaigrette.  Add about 2 Tbsp of Balsamic Vinegar to a small glass jar, add a sprinkle of salt and pepper, and a scant teaspoon of mustard.  Stir well. Add about three times as much olive oil as balsamic vinegar to the jar and stir well.

Wash and dry the arugula.  Slice the strawberries thinly.  Plate two beds of arugula with sliced strawberries on top.  Grate parmesan on top of each bed of arugula. Pour vinaigrette over each plate to taste.  Sprinkle some Smoky Balsamic Crunchsters on top for a delectable crunch.
