Wild Berry Oats

We love starting our days off with this delicious recipe. Oatmeal can be a boring breakfast if you don't spruce it up a little! You can add some local flavor and adventure to breakfast by going out and picking berries. In Colorado, we have great wild strawberries and raspberries up in the mountains. In other states, you might find huckleberries or blueberries growing wild. You can make this recipe even better with some local, raw honey for heaps of health benefits and deliciousness.  The Beyond Bacon Crunchsters add a crunch that is much desired in the mushy consistency of regular oatmeal.

Serves 2

Ingredients:

  • 1 Cup of Rolled Oats
  • 1 ½ Cups of Water
  • 4 Tbsp Heavy Whipping Cream
  • Huckleberry Syrup or Maple Syrup
  • Local, Raw Honey
  • Wild Berries
  • 1 Organic Banana
  • Beyond Bacon Crunchsters
  • Pinch of Salt

Directions:

Toast the oats in a medium saucepan.  Add water and a pinch of salt and bring to a boil, stirring frequently.  Simmer for 3-5 minutes until oats are desired consistency. Add cream and pour into two bowls, each with teaspoon of local honey.  Slice the banana and place on top of oatmeal. Add some berries of your choice and then drizzle with maple syrup or if you happen to have some, huckleberry syrup!  Sprinkle some Beyond Bacon Crunchsters on top and Enjoy!
